Ingredients:
| Basmati Rice | 2 cups cooked (brown or white) at room temp | |
| Cauliflower | 1 cup bite size florets | |
| Green chilli | 1 chopped | |
| Garlic | 1 fat clove minced | |
| Peas | 1/4 cup ( optional) | |
| Onion | 1 small chopped fine | |
| Oil | 2 tbsp | |
| Cumin | 1/2 tsp | |
| Turmeric | 1/4 tsp | |
| Garam masala | 3/4 tsp | |
| Salt | to taste | |
| Cilantro | for garnish | |
1. In a large non-stick pan, heat oil on medium heat. Add in the cumin. Saute till the cumin crackles and is fragrant, about a minute. Add in the onions, salt and turmeric and give a mix. Add in the green chilli and garlic.
2. Saute for 2 - 3 minutes till the onions are cooked down. Add in the cauliflower pieces and mix. Cover and cook while stirring occasionally till the cauliflower is tender and light golden.
3. Add in the peas and cook for a minute. Stir in the rice and mix gently. Sprinkle the garam masala and cook for 2 - 3 minutes. Lower the heat, cover and cook for a couple of more minutes. Turn off heat. Garnish with Cilantro. Serve. ENJOY!
